This is a delicious way to get in your protein and some superfoods all in one convenient snack! This snack has a good balance of protein, fat, and carbs. Because of the sugar content, albeit natural (honey or agave), I recommend eating these in the morning or just prior to a workout (unless you opt for the stevia as a sweetener). You may need to play with the proportions of various ingredients to satisfy your preferences for taste and consistency, etc. Enjoy!
1 cup smooth almond butter
3-4 scoops chocolate whey protein concentrate powder (if dairy allergy, use whey isolate)
1 Tbsp unsweetened cocoa powder
2-3 Tbsp raw honey or organic agave nectar OR 1 tsp stevia liquid concentrate
¼-1/2 cup unsweetened, shredded coconut OR gluten-free rolled oats
1 Tbsp chia seeds or ground flax seeds
½ cup chopped pistachios and dried cranberries
1. Combine almond butter, whey protein powder and cocoa powder and mix with a spoon or butterknife until blended thoroughly.
2. Add in honey/agave, oats/coconut, chia seeds, cranberries and nuts and mix thoroughly.
3. Shape mixture into the bottom of a square pan, sprinkle with Celtic sea salt ; Refrigerate for at least 1 hour.
4. Cut into squares; store in refrigerator in an airtight container if not serving immediately.
